Sesame Coated Cheese Finger
with Orange DIP


Ingredients:
  • 8 cheddar cheese fingers;
  • 50 gms sesame seeds;
  • 20 gms bread crumbs;
  • 2 eggs;
  • 50 gms flour;
  • oil to fry;
  • For the orange dip:
  • 100 gms Orange Tang powder;
  • 50 ml salad oil;
  • 1 tbsp Tabasco
  • 20 ml vinegar;
  • 1/4 tsp salt;
  • 100 ml water
Method :
  • Spread flour on a plate. coat the cheese fingers with the flour evenly.
  • Beat eggs in a bowl and coat the floured fingers with egg.
  • Coat the above fingers in mixture of breadcrumbs and sesame seeds.
  • Refrigerate for and hour and repeat the above step and freeze for 2 hrs.
  • Deep fry in hot oil till the outside is golden.
For the Orange Dip:
  • Dissolve Orange Tang in water and gently warm it.
  • Add vinegar, salt, oil and Tabasco sauce and whisk vigorously.
  • Serve chilled with the cheese fingers.




Gosht Kofta And Cheese Stuffing

Ingredients:
  • 400 gms boneless lamb;
  • 50 gms cheese;
  • 10 gms ginger;
  • 5 gms garlic;
  • 4 green chillies;
  • 3 gms garam masala powder;
  • 50 gms cream;
  • salt to taste.
For Khorma :
  • 25 gms ghee;
  • 2 gms cinnamon;
  • 2 gms cardamom;
  • 2 gms cloves;
  • 2 bayleaf;
  • 10 gms ginger-garlic paste;
  • 1 tsp coriander powder;
  • 1/2 tsp roasted jeera powder;
  • 2 tbsps brown onion paste;
  • 50 gms cashew paste;
  • 100 gms yougurt;
  • 50 gms cream;
  • 7 gms white pepper;
  • 3 gms garam masala powder;
  • salt to taste;
  • coriander leaves for garnish.
Method :
  • Pass the boneless lamb, cheese, ginger, garlic and green chillies in a mincer twice for fine mincing.
  • Add garam masala powder, cream and salt rub well until the mixture is smooth.
  • Make lemon-sized dumplings of each and steam for 15 minutes.
